Sauteed Sockeye Salmon Meal

Sauteed Sockeye Salmon with Spaghetti Squash, Swiss Chard, and Roasted Beets for 4 people

(Makes for Family of 4)

Ingredients
4- 6 oz. pieces of Sockeye Salmon (Skin on)
1- medium Spaghetti Squash
1 bunch swiss chard
4 medium fresh beets
Butter (whole unsalted)
Olive Oil (Extra Virgin)

Saute Sockeye Salmon
Hot pan+cold oil= no stick
Cook on flesh side first for 3-4 minutes.
Turn over and cook on skin side for 3-4 minutes.
Salmon should be medium


Spaghetti Squash
To cook squash, heat oven to 350.
Cut squash in half, scoop out seeds, and place on a coookie sheet.
Roast 45 minutes.
Use a fork to remove flesh.
Sautee in butter, salt, and pepper.


Swiss Chard
1 bunch swiss chard
Blanch in salted water for 5 minutes.
Let cool.
Sautee in butter, salt and pepper.


Fresh Beets
Heat oven to 350.
Wrap in foil.  Add a little olive oil, salt, and pepper.
Roast at 350 degrees for one hour.
Take out of oven and let cool.
Peel then cut the beets.
Sautee in olive oil, salt and pepper
