Onion Preserves

<P><SPAN style="FONT-SIZE: small"></SPAN>&nbsp;</P>
2 ounce olive oil
4 pounds yellow onions sliced
3/4 cup sugar
3/4 cup red wine vinegar
Salt and pepper to taste
 
 
In a hot saut´┐Ż pan add oil and onions.  Cook until the onions are wilted and soft.  Add remaining ingredients and seasonings.  Reduce liquid.  Remove and cool.  Great for steak topping or just on a piece of toast.
