Fall is Soup Season

Butternut Squash Soup
Ingredients:
2 Cubed Butternut Squash
1 Diced Onion
Butter
Stock (Chicken or Vegetable)
Heavy Cream
Salt 
Pepper
Spices
 
Directions:
In a large pot, melt butter and cook onion for about 5 minutes or until soften. Add diced butternut squash and stock to cover vegetables. Bring to a boil and reduce heat to low, cover and simmer until squash is tender. Transfer the soup to a blender and blend until smooth. Return to pot and mix in heavy cream, salt, pepper and desired spices.
