BAKED TORTILLA CRISPS

Ingredients:
6 low sodium corn tortillas

Directions:
1. Preheat oven to 350 degrees
2. Stack the tortillas and cut into 6 wedges.
3. Lay tortilla pieces on a baking sheet so they do not overlap.
4. Bake 15 to 20 minutes. Chips should be crisp and lightly brown.
Can be cooked plan or sprinkled with your favorite seasoning.

FIRE ROASTED RED BELL PEPPER HUMMUS

Makes 2 Cups

Ingredients:

1 15 ounce no salt added can chickpeas, rinsed and drained
1/2 cup fire roasted red bell peppers
1/4 cup nonfat Greek yogurt
2 cloves garlic, chopped
1/2 teaspoon ground cumin
1/4 cup toasted sesame seeds
1/4 cup fresh squeezed lemon juice
2 tablespoons Italian parsley, chopped
1/8 teaspoon fresh ground black pepper
Cayenne pepper to taste

Directions:
1. In a food processor, puree all ingredients until smooth.
2. Add more yogurt as needed to thin to desired consistency.
