Warm Spinach Salad in Crepe Pocket
 
1 package premade crepes
1 bag baby spinach
4 ounce goat cheese
1 each tomato julineed
1 each yellow pepper juliened
1/4 cup bacon vinaigrette
1 teaspoon olive oil
 
In a hot saute pan heat crepe for about 30 seconds on each side.  Remove.
Next add olive oil.
Place spinach, tomatoes, and peppers into pan and lightly saute.  Place
inside crepe and add
goat cheese.  Fold and plate.  Drizzle with dressing and serve.
