3 firm roma tomatoes, diced
1 small red onion diced
Juice from 2 lemons
2 tablespoons olive oil
1/2 cup flat leaf parsley chopped
1/4 cup dried mint
1/2 teaspoon cumin
Salt and pepper to taste
Combine all ingredients in a medium bowl. Add salt and pepper to taste.
Refrigerate until ready to serve.
