1 each red pepper cut into strips
1 each red onion cut into strips
1 head Bibb lettuce cleaned
1 small bag shredded carrots
1 cucumber cut into strips
4 ounces of soy dipping sauce
1 package clear noodle wraps
1 each tomato deseeded and cut into strips
Start by soaking noodles in warm water to make workable. Remove from water and place on cutting board. Place the Bibb lettuce into the middle of the wrap. Next top with the remaining ingredients. Roll just like an egg roll. Serve immediately with sauce on side for dipping.
