Onion Preserves

2 ounce olive oil
4 pounds yellow onions sliced
3/4 cup sugar
3/4 cup red wine vinegar
Salt and pepper to taste
In a hot saut? pan add oil and onions.  Cook until the onions are wilted and soft.  Add remaining ingredients and seasonings.  Reduce liquid.  Remove and cool.  Great for steak topping or just on a piece of toast.
