5 cups chopped tomatoes, drained
1 package (6 oz. size) strawberry flavored Jell-O mix
(Do not use Jell-O pudding mix)
Cooking Instructions: In pot over medium heat, mix sugar and drained chopped
tomatoes. Cook to a boil. Reduce heat and let cook down slightly, about 1 to 2
minutes. Add 1 package strawberry Jell-O mix. Simmer about 10 minutes till it
thickens. Pour into prepared pint canning jars leaving one-inch air space at
top. Seal and allow to cool till lid "pops?�. Best if allowed to set for at
least 48 hours.
Recipe yields 2 to 3 pints.
Children are amazed that the "preserves" is really a "vegetable".
