Lobster Pot Pie

(broken lobster meat with a rich lobster and vegetable cream filling)

small diced peppers , onions, celery and carrot ( 2 cups of each)
1 bay leaf
1/2 tbsp paprika 1/2 tsp cayenne pepper
1 1/2 cup Dry Sack  Sherry
1 quart Lobster Stock ( Lobster base can be used)
2 cups of heavy cream
1 cup of flour
1 pound of lobster meat

sweat all vegetables and spices for five min and add two tbsp of butter add 1 cup of flower and stir for 1 to 2 min until vegetables are covered with flour deglaze with sherry and add lobster stock let simmer for 15 min and add cream then let simmer for an additional 15min stirring occasionally salt to taste
