3-4 lbs baking potatoes
1 lb. bacon
1 stick butter
1 pint sour cream
salt and pepper
1/2 bunch green onions (thinly sliced)
1/2 lb cheddar cheese
fresh chives, minced (optional)
Bake potatoes, let cool, chop into bite size pieces.
In a skillet (or microwave)cook the bacon,let cool and crumble. In a large bowl
combine the butter and sour cream, salt and pepper and chives (optional). Stir
in the potatoes, green onions, bacon and cheese. Serve at room temperature.
